tasty tuesday: easy peasy chicken stir fry

Hello everyone! In honor of the Biggest Loser Finale tonight..I'm posting a semi-healthy recipe. Are y'all watching?? Are you completely addicted like we are here? A friend of ours is going to the finale and I'm very jealous. I loved Kristen, but she got voted off {grrrrrr}, don't get me started on Ron, so we're rooting for Tara...what about you?
Anyway...back to the recipe: It's sooo easy and let me give you a little hint: for the next couple of weeks, it will be super inexpensive as well.



In Sunday's paper (on Mother's day) there were coupons for $1.50 off of Kraft salad dressing. Time to stock up! At my Super Wal-mart, they are only $1.59, so 9 cents a bottle isn't too shabby. (Another hint: you can buy the coupons in groups of 10 or 20 on Ebay.) My new favorite for this recipe is this one:
Yummmmm. I could drink this stuff. My husband likes the regular catalina dressing, but you also use the sweet honey catalina, the asian toasted sesame, or any one you want to experiment with.

Catalina Chicken Stir Fry
1 lb. boneless skinless chicken breasts, cubed (I only used abt. a third of the above pkg)
3/4 cup Kraft Catalina Dressing (or any kind you like~see above)
1/4 cup Soy Sauce
1/2 tsp. garlic powder
1 pkg. (16 oz.) frozen mixed vegetables, thawed, drained or 3 cups fresh veggies

*Cook chicken in dressing, soy sauce and garlic powder for 5 minutes.
*Add vegetables, cover.
*Simmer 5 to 7 minutes or until vegetables are tender,stirring
frequently.
*Serve over hot white or brown rice (Bob and Jillian would vote for brown).

Makes 4-6 servings, if you want more, just add more dressing, veggies, and/or chicken.

And me, being the gourmet chef that I am, forgot to take a pic when it was all cooked. Oh well~it's super good, super fast, super easy. A recipe made for Melissa. :)

  1. This sounds WONDERFUL! I love a good recipe that happens to be easy and inexpensive, too! Can't wait to try this one.

    I haven't watched the show this season...(gasp!) I know. No doubt it will be exciting tonight. Hope Tara wins! Like you said, there is something very exciting about seeing transformations like that! = )

  2. Back when we lived in Ohio my friend Tammy would come over every week and we would watch Biggest Loser together. Since we moved we switched to texting each other during the episodes. :) My sister is very into this season. She really liked Kristen too. I'm a Tara fan all the way through. My sis called and wanted to know who I was voting to keep last week. I told her Ron cause I want Tara to win. She was voting the same way because she said, "Ron was manipulative and deceitful and he doesn't deserve to have his wishes respected." I literally laughed out loud. Have fun tonight. I'll be parked right here on my couch.

  3. Ok, not only am I loving that you put in your super great deals, and the fact this sounds yummy and easy....what? Ron is in the finale? Isnt' he the dad? We have been watching the last few episodes but missed who America voted in and I thought for sure it would be his son. We have watched past seasons, but with this one our schedule got away from us.
    Definitely watching tonight. :)

  8. I am a dedicated Biggest Loser fan.It's a shame to vote Ron off simply so Tara can win. So if Mike stays on the show he can give Tara a run for her money. Go Mike!!

    We too are voting for Tara but we want Mike in the finale too so that Dane has a better chance of winning the at home contest.

  13. Hey Melissa, thanks for the recipe, it looks Delicious! I can't wait to try it out...in fact as I was drifting off to sleep last night I was thinking "hmmm stirfry sounds good. I haven't made that in a while..." Now I have a yummy new recipe to try. Oh and also I'm also a big fan of Biggest Loser although I was rooting for Sione so I was bummed when he got voted off. I know what you mean about Ron "THE God Father", definitely not a fan!

  21. I am going to have to find that Mandarin dressing...yum! I like to make a copy cat ( and healthy version) of the Chinese chicken salad from Applebees, and that would be yummy on it! The kraft coupons weren't in our paper, maybe next week. We love biggest loser! Ron drives me nuts, always thinking he is in charge of saying who gets voted off...grrr! I love Tara and I hope she wins!!!

  23. This is one of my favorites, Melissa! I will be thinking of you tonight as I watch the Biggest Loser rooting along with everyone for Tara. Also, you can print out at least 4 dressing coupons on kraft.com per computer - they are for $1 off so they're not as good as the ones in the paper, but still make the dressing pretty cheap. Have a great night and enjoy the finale!
