Here are some of the recipes I promised from the baby shower~

Lime Slush

Asian Chicken Spinach Salad
from my sister, Kelsey. Makes a big, delicious batch~

Dressing:
1 c. canola oil
2/3 c. teriyaki sauce
2/3 c. white vinegar
6 Tbsp sugar
½ tsp salt
½ tsp pepper
16 oz. Pkg bowtie pasta
2 bags fresh spinach
1 (6 oz) bag craisins (I like lots of these)
3 cans mandarin oranges, drained well
½ c. fresh parsley, chopped
4-5 chopped green onions
¼ cup toasted sesame seeds
6 oz. Honey roasted peanuts (I like lots of these too)
2 cups chicken, cooked and shredded (optional)
1 cup fresh 4-cheese Italian blend
Blend vegetable oil, teriyaki sauce, vinegar, sugar, salt, and pepper in a blender. Pour over pasta and chill in refrigerator for at LEAST 2 hours (I usually let mine sit overnight, because the flavors come out better the longer it marinates). Toss in spinach, craisins, mandarin oranges, parsley, green onions, sesame seeds, peanuts, and chicken. Sprinkle Italian blend cheese on top and serve cold.

Crescent Rolls
(sorry no picture) Kaylyn made these ~ they were so good!

1-½ Cups warm water
2 Tbsp. Yeast
½ cup sugar + 1 tsp
½ cup butter or margarine melted
1 tsp. salt
3 eggs beaten
5-1/2 to 7 cups flour

Add flour until dough is smooth and not too sticky. Knead for about 5 min. Let rise until doubled. Divide dough in half. Roll each half into a circle. Cut into 16 wedges each and roll up from outside edge in. Place on a greased cookie sheet, placing the dough tail on bottom. Let rise again. Cook at 400 for 10-12 min.

Fruit Pizza

Perfect for showers or lunches~a beautiful presentation! You can buy ready made cookie dough if you want to make it easier. If you use ready made dough, cut into slices all over cookie sheet, then roll together.

Crust:
1 cup butter, softened
1-1/2 cups white sugar
2 eggs
2-1/2 cups all purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt

Topping:
1 8 oz pkg cream cheese
½ cup white sugar
1 8 oz Cool Whip, thawed
2 tsp vanilla extract

Y our choice of fruits: strawberries(cut in half), bananas (soaked in lemon juice water so they won’t brown), kiwis, fresh sliced peaches, blueberries, anything you want. Be sure to drain them well and dry fruit so they won’t make it soggy.

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, cream together the butter and sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into a 10X15 jelly roll pan.
3. Bake in preheated oven for 18-20 minutes, or until lightly browned. Let completely cool.
4. In a large bowl, beat cream cheese with 1/2 cup sugar, cool whip and vanilla until light. Spread on cooled crust.
5. Before putting fruit on, cut into pieces so you don’t have to cut fruit in half.
6. Arrange desired fruit on top of filling, and chill.
