an easy dinner we love

This past year I've discovered that I love Indian food.(our favorite is the Kathmandu in Salt Lake -- the chicken coconut korma is yummm) Anyway, I was looking for some good family friendly Indian recipes online, and had my shopping list ready to go. I was in the aisle at the grocery store in the international aisle trying to find the ingredients, and I saw a guy who looked like he knew what he was doing putting these in his cart, so after he left I took a look, saw that they were only $1 a packet, this one had a mild seasoning, and looked easy enough, so I went for it and put the rest of the stuff back.

And we love them -- one packet serves 6! I actually don’t follow the directions exactly and make it in the crockpot. I cover the bottom with chicken breasts, sprinkle them with the seasoning, add 2 small cans of tomato sauce and let it cook on low all day.

Before we’re ready to eat, I stir in some sour cream and a little milk, gently mix together and then serve with cilantro (I love cilantro!). It calls for cream, but I don’t always have it on hand, so this works. This isn't my picture (stock photo from Amazon), but we do love it with naan bread from Costco and some vegetables.

  2. I love Indian food! I have some great recipes that take time and some crazy spices. If you are going for easy and you have a Costco nearby, you need to try the Maya Kaimal brand coconut curry. It is in the refrigerated food section--or the "fancy food" section, as we call it--in a plastic jar/container. We love to sauté vegetables and chicken, mix in the curry and serve it with rice and naan. It's SO good and is on the table in under 30 minutes.
