3 Ingredient Peanut Butter Cookies * Best Easy Cookie Recipe

I have a distinct memory in sixth grade of sitting in the back of Mrs. Fleharty's Home Economics class and sing-whispering "crispy critters" with Catie Cook. I also remember that I didn't like the fabric we could choose from to sew our own fanny packs and so she let me look through the catalog to choose some fun colors to order. Mine was teal with a dark pink rasberry trim. Mrs. Fleharty was so patient with us! She also taught us the best peanut butter cookie recipe with only 3 ingredients. The smell of these baking brings me right back to Meadow Hill middle school.

This recipe has been a faithful friend for over 30 years! For my public speaking class in college we had to give an instructive speech and I chose to teach how to make the easiest cookies in the world. It's a great answer when kids are bored and want to make something. It's an easy snack to throw together for anything.

All you need:
















1 cup peanut butter
1 cup sugar
1 egg




















Mix together with a wooden spoon. Roll into balls, place on greased cookie sheet (or lined with parchment paper) Dip a fork into flour and criss-cross each cookie to flatten slightly.













Bake at 350 degrees for 8-10 minutes. I always drop the pan on the top of the stove to get the air out of the cookies. Let cool for 10 minutes before eating.

























*note: eggs come in different sizes, so if my batter seems too sticky I probably had a larger egg. If I  put flour on my hands when I'm rolling them into balls that usually does the trick too. Or, you can roll them in white sugar. If it still seems to sticky, add just a little flour to the batter.
