Here is another recipe I love. If you like coconut, almonds, and rice chex, you'll be in heaven. It's chewy and gooey and very addicting, plus super easy to make~microwave! I got the recipe from my friend, Ginger in Idaho.

Chewy Almond Chex MixIn large bowl, put
12-15 oz Rice Chex
2 cups shredded coconut
2 cups sliced almonds
Mix and set aside. In a microwaveable bowl, combine
1 cup light Karo syrup
1 ½ cubes butter
1 cup sugar
sprinkle of salt
Mix and microwave for 2 minutes, stir. Then microwave for about 2 more minutes until it boils. Remove and add
½ tsp baking soda
1 tsp vanilla extract or almond extract (I use almond, because I love everything almond)
Pour over dry mixture and mix well.

It's also cute to put in cellophane bags and to give to neighbors and friends with a note saying, "we made a list and "chexed" it twice, to be sure we included our neighbors so nice" or something along those lines.

ReplyDeleteYour almond chex mix sounds wonderful. I read your previous post about the peppermint sticks. When we were kids we would cut the top off a lemon and poke a peppermint stick down in the lemon, squeeze the lemon and suck the juice thru the peppermint stick! Try it! They are sooooo good!
