best caramel corn recipe

** winner of the Mirrormate $200 giveaway is it you?? :) **
We *love* this recipe. I got it from my Mom and I think she got it from Grandma? (Shuz?) Anyway, on Sunday nights we would all gather out at my Grandma Lofgren’s and this would be a favorite to bring and share. My mom would bring it to the neighbors at Christmas as well. It makes a BIG batch. It’s gooey and soft, so if you love the cracker jack, crunch type of caramel corn, this probably isn’t for you.  Uhhhh, as you can see, it’s not low calorie either, but it’s perfect for fall~throw in some candy corn for a fun twist! :)

caramel corn recipe

Gooey Caramel Corn
Pop 4 batches of popcorn (2 cups unpopped corn, most air poppers take 1/2 cup at a time), remove unpopped kernels, and salt lightly.
Bring to boil slowly over medium heat:
1 cup light Karo syrup
2-1/3 cups brown sugar.
2 sticks of butter
1 can Eagle sweetened condensed milk (use brand name here)
When it boils, Turn down heat and cook for 2-3 minutes stirring constantly. Add a pinch of baking soda, stir and pour over popcorn. Mix all together and don’t email me when you eat the whole bowl and gain 5 pounds.

Wow!  Thanks for sharing your family recipe...they are the best!  This looks amazing!  Pinning it! :)

Everything about this recipe is sinful, Richella. But we've got to make at least one batch every fall :) I made it the other day with ONLY (!) one stick of butter and it was still super good. :)

Then my mom gave me this recipe, but we put it in a turkey pan and bake for an hour, mixing every 15 minutes. Its still gooey, but has some crunchy parts. It's addicting!

  5. This looks yummy!  I have tried so many recipes for this and it never turns out.  I will definitely try this one and your doughnuts as well.  Can't wait!

  6. Can you use microwave popcorn if you get the one without butter?

Sure, you just have to pop LOTS~Probably about 6 batches? Or half the recipe...

  8. I cannot wait for fall! I have an off-topic question: how do you make the white borders behind pictures disappear? Every picture I post has a shadow-effect under it. Not sure if you have this problem since you're a .com but I think you used to be a blogspot. Thanks!

  9. This looks delicious and makes me excited for the crisp fall weather around the corner.  Thanks for posting.
