toasted brown sugar oatmeal cake

I’m going to start the weekend with one of my favorite recipes from my mom! It’s a perfect fall cake on a Sunday afternoon: oatmeal, brown sugar, nuts, what’s not to love?
I used almonds in the topping for this one, because that’s all I had on hand. I hope your family loves it as much as ours.

Cake:
1 ½ cups boiling water
1 cup quick oatmeal
1/2 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
1 ½ cups sifted flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
½ tsp salt
Soak oatmeal in boiling water. Meanwhile, cream butter and sugars together. Stir in oatmeal.
Sift together dry ingredients; stir into oatmeal mixture. Turn into greased
and floured 9X13 pan. Bake at 350° for 30-35 minutes or until golden brown and knife comes out clean in the center. Cool in pan.
Spread with topping and broil for about 1-3 minutes or until golden brown. Watch carefully!
Topping:
1/4 cup brown sugar
6 Tbs. butter
1/2 cup sugar
1/4 cup cream or evaporated milk
1 cup flaked coconut
1 cup chopped walnuts
1/2 tsp vanilla
-Combine all ingredients, except vanilla in a saucepan. Heat until bubbly; stir in vanilla.

    OMG!  My grandmother used to make this cake all the time for us in the 60's.  I hadn't made it for years but have made to three times recently to take to work.  We all love it.  One of the gals suggested adding apples to it for fall.

    This cake brings back some great memories.

  3. It looks so delicious, but I think too much sugar? Can I substitute low calorie sugar instead of normal sugar? Will it change the desired taste or will it stay the same? Thanks.
