a no bake cookie kind of day...

27 January 2009

It's cold! (for us!)

We even got a little snow...

My boys aren't feeling well, I'm praying the baby doesn't get sick, my husband doesn't come home until late tonight and we just needed a good treat. So, we started making no-bake cookies when I realized I didn't have any cocoa powder. Going to the store isn't an option today. So, we made them without the cocoa powder, and they turned out delish! A warm, oatmeal peanut butter cookie.

This is my mom and grandma's recipe for no-bake cookies~we loved them after school. Perfect for days like this...

No-Bake Cookies
Mix together in a medium saucepan:

2 cups sugar
1/3 cup baking cocoa (just found out this is optional!)
½ cup milk
½ tsp salt
1 stick margarine

Bring to a rapid boil slowly. Once the rapid boil begins, boil for one minute. Remove from heat and quickly add:

1 tsp vanilla and ½ cup of peanut butter.

Mix and then stir in 3 cups quick oats.
Drop by teaspoonfuls onto waxed paper or greased cookie sheets, or leave to harden in
the pan and cut into squares.

Both of these come from talented sewers, something I wish I could be or at least develop the patience for!
