easy homemade mac and cheese
Hello! It’s the last week of our 31 days! I can’t believe I’m still going :)

I wanted to share another dinner staple at our house. It’s super easy, and about as much effort as opening a box of macaroni & cheese, except you will use REAL cheese, not the powder. It’s the ultimate comfort food and perfect for a cold fall or winter night. It is adapted from a recipe that I received from a dear reader, Elisabeth Beutler. She also gave us upside-down pizza which is a big hit.

Easy Homemade Mac & Cheese

16 oz bag elbow macaroni

1/4 cup butter or margarine

3 Tbs. flour

1 tsp ground mustard (gives flavor and color)

salt & pepper to taste (we love Costco’s garlic salt)

2 cups milk

2 cups cheese -- whatever your family prefers.

Cook the macaroni according to directions.

Meanwhile, in medium saucepan melt butter. Then blend in flour, mustard powder, and salt & pepper. Cook on medium heat until smooth and bubbly. Gradually add milk. Bring to gently boil and stir over medium heat until mix thickens. Stir in the cheese until it is melted and mixed together.

Drain pasta, add the cheese mixture and stir together and serve warm. Enjoy!
