This recipe is from my mom and these are just “fall” to me. We all love them and they make a huge batch so you can freeze some for later or take some to neighbors. They are soft and so, so good.
Pumpkin Chocolate Chip Cookies
1 cup shortening
3 cups sugar
2 eggs
5 cups flour
2 tsp soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp vanilla
2 tsp baking powder
1 lg can pumpkin (or 2 small cans)
1 pkg chocolate chips
Mix all ingredients together, drop by teaspoonful on greased cookie sheet. Bake at 350 degrees for 12-15 minutes.

I love pumpkin chocolate chip cookies....they are my absolute favorite fall treat. I make them only in the fall (they taste better then for some reason) but mine only take three ingredients. So yummy!

ReplyDeleteI am dying for Thursday to make my annual pumpkin-chocolate chip bread! All I do is take Pillsbury Pumpkin quick-bread mix, add chocolate chips, and bake them in mini bread loaf pans. I'm practically drooling over your cookies right now. They look awesome!

ReplyDeleteThose cookies kind of look like my mom's carrot cookies. Ever had those? They were soft and puffy like these. No chocolate chips, though--we couldn't have afforded to add chocolate to carrot cookies! :)
There is no canned pumpkin to be found in our city right now. =( Something about the pumpkin crop and lots of rain and the farmers haven't been able to get it canned yet? So I have to wait. Boo! Those do look good though!!!
